Anchovy Omelet (Tortang Dilis)

Yesterday, I went to the market to buy some fresh veggies. I decided to drop by the fish section and saw some anchovies (dilis). But my eyes grew wide when the vendor told me that one-fourth kilo of the anchovies is P50.00! I still bought one-fourth kilo, though, hehehe. :-) Anyway, for lunch today, I made anchovy omelet (tortang dilis). This is my family’s favorite. The little boy loves to sprinkle this with ketchup and I love to pair this with hot steaming rice and a  bowl of malunggay soup! Yummmm!

Oh little anchovies, we are gonna eat yah… hehehehe :-)

For this recipe, I used a local breading mix (not those advertised on TV) and that breading mix has been my favorite too when it comes to coating meat, chicken or fish and these anchovies. I mixed the anchovies with one egg and then drenched them into my special breading mix. Then fry them in medium heat. Once they turn golden brown, I removed them from the pan and drain ed them on paper towels.

I had to take a picture of the omelet before it was devoured by my two hungry boys… hehehe… :-)

    I haven’t had dinner yet and i so want to have some of these but seafoods though are not allowed for me at the meantime. It’s been a while since I last had anchovy omelet.
