While I was blog hopping last week, I saw this easy rice meal from a fellow mommy. My interest was piqued and I wanted to try her recipe out. It is rice, veggies and chicken mix. It was easy to make and delicious to eat too. Okay, I had variations to her recipe because most of the veggies she used were not available in my fridge. So I just had to use whatever I had here.
I had some carrots, Bagiuo beans and cabbage for my veggies. I prepared onion and garlic for sauteing. After doing so, I had the chopped left over chicken mixed into the vegetables. By the way, the cabbage was added last.
After adding this, the rice came in next with the chicken broth. I let it simmer for about 10 minutes or until the rice was fully cooked.
A few minutes before the rice was cooked, I added the cabbage. Unfortunately, I wasn’t able to take a photo of the cooked dish because we were all so hungry already as it was already half past the hour of 12! But it did turn out good. The only downside to it was that the rice became a bit sticky. I put too much chicken broth to it, but still, my boys loved it, even the baby ate quite a number of spoonfuls of it.
I am glad I was able to drop by that mommy’s blog. On my next attempt to cook this, I will make sure that it will be perfect.
